La teor&iacute;a m&aacute;s popular sugiere que la tradici&oacute;n de las galletas de jengibre como s&iacute;mbolo de afecto puede haber comenzado con la Reina Isabel I, cuando encarg&oacute; intrincadas galletas a semejanza de sus invitados reales.<\/p>\n<p>La idea gan&oacute; popularidad entre la corte real y sus sirvientes. Los caballeros daban galletas a las doncellas con elaboradas flores, p&aacute;jaros, o el escudo de su familia o pa&iacute;s. El jengibre era una especia cara que indicaba la seriedad del amor de alguien. La especia tambi&eacute;n calentaba el cuerpo, y el coraz&oacute;n, de quien la recib&iacute;a. Se dec&iacute;a que las mujeres j&oacute;venes a las que no les regalaban pan de jengibre com&iacute;an estas galletas de todos modos, pensando que les traer&iacute;a buena suerte para encontrar el amor en el futuro.<\/p>\n<p>El pan de jengibre que se usaba para esta rom&aacute;ntica costumbre no es el mismo que comemos hoy en d&iacute;a. A menudo se usaba pan de jengibre blanco para ayudar a captar los detalles de los moldes en donde se hac&iacute;an. Esta es una receta en ingl&eacute;s antiguo:<\/p>\n<p>&ldquo;Gyngerbrede.&mdash;Take a quart of hony, & sethe it, & skeme it clene; take Safroun, pouder Pepir, & &thorn;row &thorn;er-on; take gratyd Brede, & make it so chargeaunt*. And &#541;if &thorn;ou wolt haue it Red, coloure it with Saunderys y-now.&rdquo;<\/p>\n<p>Esencialmente, el proceso comienza al hervir miel, azafr&aacute;n, pimienta blanca y canela. Una vez mezclado, se a&ntilde;aden migas de pan hasta que se forma una masa. A continuaci&oacute;n se debe esparcir la mezcla y, una vez que se haya enfriado, el dulce se corta en cuadrados.
