Move over, rainbow bagel–the technicolor grilled cheese is the newest psychedelic food fad. In this surreally vibrant version of the standard sandwich, each shade of cheese has a different tang: the green is flavored with basil and the red with tomato, while the yellow is a mix of conventional mozzarella, cheddar, Emmental, and gruyere. If that combo simply sounds like an updated twist on caprese, keep in mind that the blue is flecked with lavender.
For those of you intrigued by this unicorn breed of an all-American classic treat, it's not yet available on U.S. soil (though it's only a matter of time at this point). For now, it's concocted exclusively at Hong Kong's Kala Toast shop. Fortunately, Instagrammer @hkfoodiexblogger has tried the scintillating sandwich and offered her personal review. She says the taste is “rather average” and “a bit oily,” but the gooey garishness is undeniably photogenic (if a bit unsettling) nonetheless.
