Artist, cook, photographer, and co-founder of the Our Delicious Food blog, Karin Pfeiff Boschek creates spectacular pie designs hand-cut and assembled from her own home-made pastry. The talented pastry chef often publishes pre- and post-oven photos of her culinary creations on Instagram. In their raw dough form, the pies are already beautiful, but after their time in the oven, the tasty tarts look deliciously golden and perfectly ready to eat—almost too pretty to cut into!
From pretty pastry petals to geometric shapes, there’s no bounds to Boschek’s creativity when it comes to pie crust designs. “I have endless ideas for new designs, many more than I have time to actually create,” Boschek tells My Modern Met. “Inspiration comes from nature, from inanimate objects and from traditional graphic and geometric designs. I just recently brought in 12 different leaves from trees and bushes in our garden and used them as models for hand-cutting leaves out of pie dough using a scalpel. I also designed a background for decoration from a cast-iron gully lid I saw down the street from our house.”
Boschek spends anywhere from 2-8 hours artistically decorating each pie. “I usually begin by making the pie shell, filling it, and then either place a flat top crust on as a base for further decoration, or add decorations to the fruit filling,” she explains. “Alternatively, I may just use colorful fruit as its own decoration. If I want to color the dough I only use natural colors such as freeze-dried berry powders, turmeric, red-beet or spinach powder.”
Boschek’s pies not only look amazing, but they taste great too! Most of her creations are of the sweet variety and often showcase a single filling. So far, she’s shared mouth-watering images of peach, raspberry, apple, chocolate, and rosemary pies. Her pies also include an especially enticing baked cranberry and sour cherry delight with a minimalist paisley pattern. Each delectable creation in her growing portfolio of baked goods is like a masterclass in pastry decoration—featuring lattices, braids, and motifs of every variety, including leaves, flowers, stars, snowflakes, and hearts.
